It really comes down to math and knowing when to run.

what Inferno said. Don't take on more than you can handle. If you do, use ultimate defense when you need it. Pull mobs away from the crowd. If they are aggro just walk close and let them follow you a bit before engaging. This is so damn simple....

In beta, and in Live, I've only died to mobs a total of .....twice. =P

At the very most, you should be taking on whites, but they aren't efficient.

You should be killing greens and light blues.

Yes, archers and some mages can kill reds. However, its not more efficient. It just is "bragging rights".

Reds = more downtime, and usually more adena expenditure in the terms of SS's.

For example, lets say we take an hour of play time.

In those 60 minutes, you are basically going to get the same exp, SP, and MORE adena, killing light blues and greens, as that archer or mage is going to get killing reds.

Another example: lvl 38 archer killing yellows and reds takes about 12 hours to lvl. Lvl 34 knight killing greens and light blues takes....can you guess? Yup, 12 hrs to lvl. But in that time, I'm getting more adena than the lvl 38 archer because I can kill MORE mobs in that time.

As a result, killing below your level is actually just as efficient, to MORE efficient, than killing above your level.

Good rule of thumb: Whatever you can kill with 2 SS's at most, and keep killing, with basically no downtime EVER, is the most efficient mob for you to kill.
